    Great interview !!!! I can’t wait to take the tour of the brewery. I didn’t realize it is only about 5 or 6 miles away. One question that I would ask being from the immediate area is “Do you use specially filtered water?”. Knowing that the local tap water has an earthy smell and taste.

    Mike – I will email him & ask – I do not think he will care me asking if he filters or not & what type of filter he uses.
    BTW – Good Honey Wheat Beer!!

    My guess is they have a huge industrial strength RO filter. Otherwise their beer would tast like Lake Lavon !!!!

    Another question to ask….. Since we all know that it gets as hot as the surface of the sun in TX, how does he control the environmental conditions? Especially since we can see the large windows and the mashing/sparging tanks next to them.
